Alpine Potato Soup

Ingredients

  • 1 Tbsp olive oil

  • 1 cup onion chopped

  • 1 clove garlic minced

  • 5 cups chicken broth

  • 4 medium potatoes peeled and sliced (I use red potatoes and don’t peel)

  • 4 carrots peeled and sliced

  • 2 stalks celery sliced

  • 1/2 ring Polska kielbasa sausage sliced

  • 1 tsp dried dill weed

  • 3 Tbsp chopped fresh parsley

  • 1/2 tsp pepper

Directions

  • Saute the onion and garlic in olive oil. Add the chicken broth, vegetables, and sausage to onion mixture. Bring to a boil and simmer 25-30 minutes until potatoes are tender.

  • Add the dill weed, parsley, and pepper.
