Carrot Cake

Ingredients

  • 2 cups sugar

  • 1 1/2 cup oil

  • 4 eggs

  • 2 cups flour

  • 2 tsp baking soda

  • 1 tsp salt

  • 1 Tbsp cinnamon

  • 2 tsp vanilla extract

  • 3 cups grated carrots (buy already grated)

  • 3/4 cup chopped pecans

  • 1 cup raisins

  • 1/2 cup crushed pineapple (or apple sauce) drained

  • 3/4 cup shredded coconut

  • Frosting

  • 1/2 cup butter (room temperature)

  • 8 oz cream cheese (room temperature)

  • 1 lb powder sugar

  • 2 tsp vanilla extract

Directions

  • Using a hand mixer combine sugar, oil, eggs, soda, salt, cinnamon. Then add the flour. Add vanilla, carrots, and the rest of the ingredients.

  • Spray 9x13 cake pan. Bake at 325 degrees for 50-60 minutes.

  • Frosting- Mix butter, cream cheese, and vanilla together. Slowly add powder sugar.
