Carrot Cake
Ingredients
2 cups sugar
1 1/2 cup oil
4 eggs
2 cups flour
2 tsp baking soda
1 tsp salt
1 Tbsp cinnamon
2 tsp vanilla extract
3 cups grated carrots (buy already grated)
3/4 cup chopped pecans
1 cup raisins
1/2 cup crushed pineapple (or apple sauce) drained
3/4 cup shredded coconut
Frosting
1/2 cup butter (room temperature)
8 oz cream cheese (room temperature)
1 lb powder sugar
2 tsp vanilla extract
Directions
Using a hand mixer combine sugar, oil, eggs, soda, salt, cinnamon. Then add the flour. Add vanilla, carrots, and the rest of the ingredients.
Spray 9x13 cake pan. Bake at 325 degrees for 50-60 minutes.
Frosting- Mix butter, cream cheese, and vanilla together. Slowly add powder sugar.
