Carrot Cake
Ingredients
- 2 cups sugar 
- 1 1/2 cup oil 
- 4 eggs 
- 2 cups flour 
- 2 tsp baking soda 
- 1 tsp salt 
- 1 Tbsp cinnamon 
- 2 tsp vanilla extract 
- 3 cups grated carrots (buy already grated) 
- 3/4 cup chopped pecans 
- 1 cup raisins 
- 1/2 cup crushed pineapple (or apple sauce) drained 
- 3/4 cup shredded coconut 
- Frosting 
- 1/2 cup butter (room temperature) 
- 8 oz cream cheese (room temperature) 
- 1 lb powder sugar 
- 2 tsp vanilla extract 
Directions
- Using a hand mixer combine sugar, oil, eggs, soda, salt, cinnamon. Then add the flour. Add vanilla, carrots, and the rest of the ingredients. 
- Spray 9x13 cake pan. Bake at 325 degrees for 50-60 minutes. 
- Frosting- Mix butter, cream cheese, and vanilla together. Slowly add powder sugar.
